Berry cake

Furthermore we made an absolutely delicious berry cake

Ingredients (cake base):
 - 75 g butter biscuit
 - 2 tbsp. cornflakes
 - 40g white chocolate
 - 45 g butter

Crush the biscuits and the cornflakes (in a freezer bag) into little pieces.
Melt butter and chocolate  in a water bath.
Mix it all together (don't worry if it all seems a bit dry) and fill it into a cake ring (Ø 18 cm).
Press it down till you think it's enough. ;)
Then put it in the fridge or another cold place.

Ingrdients (cream topping):
- 200 g mixed berries
-  1 tsp. lemonjuice
- 10 g vanilla sugar
- 4 gelatin leaves
- 80 g sugar
- 250 g lowfat quark
- 200 ml whipped cream

Blend 100 g of the berries, the vanilla sugar and the lemonjuice and strain it through a sieve. Soak the gelatin leaves as described on the package. Whisk sugar, quark and all the berries and melt one spoon of this mixture with the gelantin in the microwave (or in a sauce pan). Then add the other mixture bit by bit to the melted gelatin while stiring. Fold in the whipped cream. Put it all on the base and let it chill.

 Ingredients (fruit jelly):
- 100 g mixed berries
- 1 tsp. lemonjuice
- 2 tbsp. sugar
- 1.5 gelatin leaves

Again blend berries, sugar and lemonjuice and strain it through a sieve. Soak the gelatin leaves as described on the package. Then add the berry mixture bit by bit to the melted gelatin. Pour it on top of the cake. Put the cake in the fridge for about 3 hours.

      Enjoy!
